Chianti Classico Riserva

  • Only in the most favourable vintages does the use of the oldest vines reward us with wine of great elegance and character that expresses at its best, a harmony of perfumes and flavours designed to delight us and to further improve with the passing years. Chianti Classico Reserva is such a wine and is a wonderful accompaniment to all types of meat and moderately aged cheeses.

  • Grape Varieties: 95-97% Sangiovese, 5-3% Cabernet Sauvignon
  • Alcohol Content: 13.5-14.5% (dependent on the year)

  • Grape Harvest

    Date: 25 September-10 October
    Method: Manual in small cases
    Production per Hectare: Approximately 4,500 Kgs (31ha = 4,100 bottles)
    Vineyard: Vignone di Geggiano
    Age of Vineyard: 25-35 years old

  • Vinification

    Stemming: in a grape shredder with soft crushing
    Fermentation: Three days of cold maceration done with the insertion of frozen Carbon Dioxide in the vat then with autoctonous yeasts in steel tanks temperature controlled for approximately 15 days, periodical rain-like pumping over the must and manual sinking of the “hat”.
    Temperature: Approximately 28-30°C
    Ageing: 2-5 years
    Barrells: 90% of 500lt and 10% of 225lt for the first ageing period of approximately 20 months (15% of new oak per vintage)
    Wood Type: French Oak (Allier, Never) medium toasting

    Casks: Of 1,200lt and 2,000lt for the final ageing period of approximately 10 months
    Wood Type: French Oak (Allier)
    Final Maturation: 6 months in the bottle

  • Annual Production: Approximately 8,000 bottles
  • Organoleptics: Rich intense ruby coloured. Slightly reserved bouquet at the beginning but with swirling rich Cherry fruit, then a very pleasing complexity emerging together with some Pepper. On the palate it’s rich and round, with nice and velvet fruit; tannins are quite smooth and well balanced by fruit and wood, a very persistent finish.
  • Serving Temperature: 18-20°C
  • Serve With: Braised meats, lamb, stewed beef or game, boar or venison, moderately aged cheeses.
